*This can double up as a salad dressing.

After it is prepared and cooled; take a tbsp of the dressing add a tsp of vinegar and a quarter to a half of lemon, it tastes between a cross of Catalina and Russian dressing!

Hot Sauce

Here's a hot sauce that has no added salt. Just a word of caution,  save cutting the habanero until last and wear gloves. These peppers are hot; about a 10 times hotter than jalapeños. Even after wearing gloves, wash your hands thoroughly.

  • ½ habanero pepper, seeded (if you want it hotter leave the seeds in)
  • 1 jalapeño pepper, seeded ( Note: Always wear gloves when handling chiles and remember to keep your hands away from your eyes! )
  • ½ cup white vinegar
  • 1/8 cup water
  • ½ tablespoon paprika
  • 1 tablespoon garlic
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon fresh ground pepper

Combine all ingredients in blender on high until liquefied. In a sauce pan over medium-low heat, bring to a simmer for 15-30 minutes (or longer for more intense flavor). Store in an air tight container. Can use an old Tabasco bottle. Store in the refrigerator and shake well before use.

Salsa

Can be served on eggs, baked potatoes, chicken, or whatever! It's all free veggies!

  • 3 (14.5 oz) cans nsa diced tomatoes, undrained
  • 1 large onion, peeled and quartered
  • 6 tomatillos, husks removed and halved ( Note: Unfamiliar with tomatillos? Look in the produce section for something resembling small green tomatoes in papery husks.)
  • 6 cloves garlic, peeled
  • 6 fresh green chile peppers (milder chiles, such as Anaheim)
  • 1 bunch cilantro
  • 6 fresh jalapeño peppers (Note: Always wear gloves when handling chiles and be sure to keep your hands away from your eyes! )
  • juice from 1 lime
Remove seeds from peppers. Put onion, tomatillos, garlic, peppers, and cilantro in food processor and process until desired "chunkiness" (I like
mine chopped fine, not chunky). Add tomatoes with juice and juice from the lime. Process until it is mixed well.

If you don't want it so "juicy" you can drain the tomatoes if you want
before adding them.

Spicy Dipping Mustard

Like slightly spicy, sweet dipping mustards used in restaurants for chicken nuggets...It's delicious on grilled or roast chicken. It would also make an excellent basting mustard for roasted meats. It has just the right blend of spicy, tangy and sweet!
  • ½ cup white vinegar
  • 2 tablespoons red wine vinegar
  • ¼ cup (approximately) dry ground mustard (you can buy it ground or grind your own mustard seed)
  • ½ teaspoon coriander
  • ¾ teaspoon dried onion flakes (or onion powder)
  • ½ teaspoon dried minced garlic (or garlic powder)
  • 1 or 2 dashes freshly ground pepper
  • 5 packages Splenda or tip of a sharp knife of 300X Lo Han (a dash)

Mix all the ingredients in a saucepan and heat for about 10 minutes, at a low simmer. It will be hot and bubbling and thicken a bit. The consistency can be adjusted by adding a little water or some more ground mustard...It will thicken a bit as it cools!

Place into covered containers and refrigerate!

Fiery Citrus Dip
This very unusual dip makes a fantastic marinade for shellfish and it is also delicious drizzled over barbequed meat.  Note if only using a small amount all body types can use.

1 orange
1 green apple
2 fresh red chillies
1 garlic clove
8 fresh mint leaves
juice of one lemon
pepper

1. Slice the bottom off the orange so that it will stand firmly on a chopping board.  Using a sharp knife, remove the peel by slicing from the top to the bottom of the orange.

2. Hold the orange in one hand over a bowl.  Slice towards the middle of the fruit, to one side of the segment, then gently twist the knife to ease the segment away from the membrane and out of the orange.  Repeat to remove all the segments.  Squeeze any juice from the remaining membrane into the bowl.

3. Peel the apple, slice into wedges and remove the core.

4.  Halve the chillies and remove their seeds. (If you feel really fiery don't seed the chillies.)  Then place them in a blender or food processor with the orange segments and juice, apple wedges, garlic and fresh mint.

5. Process until smooth.  Then, with the motor running, pour in the lemon juice.

6. Season to taste.  Pour into a bowl or small jug and serve immediately.
